Fig + Blue Cheese Crostini

When I’m entertaining, I try to have some sort of appetizers or hors d’oeuvres ready when guests arrive so they aren’t famished by the time we actually sit down for dinner. My brother-in-law has given me free reign over the fig tree in his yard, so I’ve been incorporating them into all sorts of dishes recently. A few weeks ago, I hosted a dinner party that started out with these little crostini. I assembled them beforehand, then popped them in the oven as guests arrived. They were the perfect accompaniment to a glass of wine while people gathered and chatted before dinner.

This salad was inspired by a quaint alleyway lunch I had earlier this summer at the oldest restaurant in Cannes, France, Da Bouttau – Auberge Provencale. I almost always crumble goat cheese onto my salads, but I loved the presentation of it formed into little spheres with crushed nuts. Then I decided peaches should be involved. Peach season is fleeting, so we must take good advantage of it, right?

Grilled Peach + Sweet Onion Salad with Yogurt + Mint

This salad was one of those “oh my gosh, I have people coming over right now and need an appetizer” sort of creations. I needed something quick using ingredients I had on hand. Peaches and sweet onions are jewels of mid-summer produce, and they’ve been staples in my kitchen all summer long. Grilling them brings out even more sweetness, while also adding a savory char. Plain yogurt adds a big of tang, mint adds an herbaceous note, and a sprinkle of flaky salt rounds it all out. Simple as that!

Roasted White Tomato Soup

Tomato soup and grilled cheese day in the school cafeteria was one of few days I wished my mom didn’t pack my lunch. I’ve always loved tomato soup… even the kind that comes in a box or in a school cafeteria. But then last year I had the chance to buy 10 lbs of local, organic tomatoes at an outrageously low price, so I had to find lots of ways to use them up. I made my own roasted tomato soup, and it was game over for the boxed kind. Never going back.

Strawberry Mojitos

I can’t pretend to be a masterful bartender, but it usually doesn’t hurt to befriend someone who is. I recently hosted a birthday party for my dear friend Brooks who fits the “masterful bartender” bill. Mojitos are one of his specialties, and infusing them with strawberries seemed like the perfect seasonal cocktail to celebrate him. We teamed up to make the mojitos “the right way.” I gathered strawberry simple syrup (made from scratch), freshly squeezed lime juice, and mint harvested from my balcony garden. Brooks mixed up delicious cocktails all night long. Below you’ll find his “perfected” recipe that I think hits just the right balance of sweet, sour, fruity, and minty. And I have to second his advice to skip the bottled lime juice because it “just doesn’t cut it.”

Pink Strawberry Lemonade

What exactly makes pink lemonade pink? I always hoped that it was strawberry lemonade, but I think it’s probably just red food coloring. A quick Google search provides some pretty interesting origin stories for pink lemonade… not very appetizing ones, though. Regardless of all that, this pink lemonade gets its rosy color from strawberries. Real, whole, fresh strawberries that are steeped into a pretty, pink simple syrup, not some strawberry “flavoring.” It’s sweet and a tiny bit tart and everything I’d hope for in a spring or summer drink. Spike it if you want to, or just enjoy it straight up with childlike glee (and maybe a curly straw).

Even though making strawberry simple syrup from scratch takes some time, it’s totally worth the effort to avoid fake strawberry flavor. This syrup is also great for making sweet strawberry tea, brushing onto cakes to keep them moist, and as a base for sorbet or gelato. You can make it a few days in advance so your bar is ready to go for whatever spring or summer fête might come your way.

Strawberry + Chèvre Ice Cream

Strawberry ice cream has been one of my favorite flavors since I was a child. And while I love a good classic flavor, I also like keeping things interesting! Goat cheese (chèvre) and strawberries are such a wonderful, tangy combination, but they almost always end up on salads around here. Somehow ice cream came to mind, and I’m oh so glad it did! All of the familiar strawberry goodness is in there with a little more depth and range of flavors. I used honey as an additional layer of flavor, but sugar works just fine if you’d rather mellow it out a bit.

$10 Dinner: Black Eyed Peas with Sausage and Sweet Potato Greens

This is part of my series of $5 dinners to raise awareness of hunger in America for No Kid Hungry. The average SNAP (food stamp) recipient receives about $4.50 per day in benefits.

Ok first, I have to make a confession: this is actually a $10 dinner. However, the amazing organization Wholesome Wave doubles federal nutrition benefits at local farmers markets all over the country. I went to Grant Park Farmers Market, one of Wholesome Wave Georgia’s partner markets, and gave myself a $10 budget for a dinner for two (since $5 of SNAP benefits would be worth $10 there). I ended up making a sort of stir fry with black beans, hot sausage, and lots of veggies. It honestly took me no more than 25 minutes to make, so it’s not only healthy and inexpensive, but quick, too!
